Instructions
In a skillet over medium heat, cook the ground turkey or beef until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
Stir in the taco seasoning and a splash of water, cooking for another 2-3 minutes until fragrant. Remove from heat and allow to cool slightly.
In a mixing bowl, combine the black beans, corn, diced tomatoes, red onion, lime juice, salt, and pepper. Mix well.
Gently fold the cooked meat into the vegetable mixture until well incorporated.
Take each avocado half and fill it generously with the taco filling.
Top each stuffed avocado with shredded cheese and cilantro.
For an extra kick, add optional toppings like sour cream or sliced jalapeños.
