Bring a pot of water to a boil. Add the yakisoba noodles and cook according to package instructions (usually about 3-4 minutes). Drain and set aside, tossing them with a little sesame oil to prevent sticking.
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the shrimp and sauté for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, add the chopped garlic and grated ginger. Stir-fry for about 30 seconds until fragrant. Add the bell peppers, carrots, and broccoli, cooking for another 4-5 minutes until they are slightly tender but still crisp.
Return the cooked shrimp to the skillet with the vegetables. Add the cooked yakisoba noodles, teriyaki sauce, soy sauce, and honey (or maple syrup). Toss everything gently to combine and heat through for about 2-3 minutes.
Taste and adjust the seasoning with salt, pepper, or extra sauce if desired.
Remove from heat and top with chopped green onions and a sprinkle of sesame seeds before serving.
