Ingredients
1
block
firm tofu, drained and pressed
1
tablespoon
sesame oil
1
quarter cup
soy sauce (or tamari for gluten-free)
2
tablespoons
maple syrup
1
tablespoon
rice vinegar
1
clove
garlic, minced
1
teaspoon
fresh ginger, grated
1
tablespoon
cornstarch mixed with 2 tablespoons water (slurry)
1
red bell pepper
finely diced
1
carrot
julienned
4
green onions
chopped
1
head
butter lettuce or romaine, leaves separated
to taste
sesame seeds and chopped cilantro for garnish
Instructions
Cut the pressed tofu into small cubes.
In a large skillet over medium heat, add the sesame oil and let it warm up.
Add the tofu cubes to the skillet, cooking until they are golden brown on all sides, about 6-8 minutes.
In a bowl, whisk together the soy sauce, maple syrup, rice vinegar, minced garlic, grated ginger, and cornstarch slurry until well combined.
Pour the sauce over the cooked tofu, stirring well to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens and glazes the tofu.
Stir in the diced red bell pepper and julienned carrot, cooking for another 2 minutes until the vegetables are just tender.
Remove from heat and stir in chopped green onions.
To serve, take a lettuce leaf and spoon some of the teriyaki tofu mixture onto the center.
Garnish with sesame seeds and chopped cilantro.
Fold the lettuce over the filling like a wrap and enjoy!
Notes
Use tamari for a gluten-free option.
